The team at Freedom Morayfield are rightly proud of the community’s five-star menu and love being able to serve residents and their guests delicious and nutritious meals in the community dining room.
Behind all the great food is Christian, the community’s passionate Chef Manager, who has over 30 years’ experience in cooking, catering and management. Christian loves cooking up a storm and serving delicious food that breaks the ‘aged care food’ stereotype.
We sat down with Christian to find out more about his passion for food and some of the great meals he’s making for residents.
Can you tell us about your passion for food?
“Food became a passion of mine from the early age of 16, when I started attending chef trade school. Since then, I’ve been driven to work in as many catering and food establishments as I can, always building on my knowledge and serving delicious food with a philosophy – ‘Always be humble but proud of what you can create, mentor all who want to progress further in life, and never stop learning.”
Does the food you serve residents break the ‘aged care food’ stereotype?
“Most definitely! I’m always looking for ways to break the stereotypical ‘over-cooked vegetables, bland tasting food with lack of body and flavour’. The residents deserve seasonal, flavoursome food that brings back happy, nostalgic memories on what they grew up on.”
What is the resident’s favourite meal?
“Grilled Barramundi with Dijon Herb Sauce and some Homemade Brandy Snaps, both a specialty of mine, is a popular choice among the residents.”
