Ingredients
- 1 ripe avocado
- Juice of 1 lemon
- 6 chives, finely chopped
- 8 - 10 parsley leaves, roughly chopped
- 30ml extra virgin olive oil
- 75g feta cheese, crumbled
- 2 slices toast
To serve
- 1 cup rocket leaves
- 4 - 6 cherry tomatoes, halved
- Extra olive oil
- Salt and pepper to taste
Method
Place avocado, juice, herbs, feta and oil in a bowl.
Mash with a fork.
Spread on toast and serve with a side salad of rocket and tomatoes.
Drizzle a little olive oil, season to taste with salt and pepper, and enjoy.
