Serves: 2
Ingredients:
Salmon
• 200g salmon fillets
• ½ tbsp olive oil
• 1 tbsp shallots, chopped
• 1 tbsp butter
• 2 potatoes (optional)
Salsa
• 8 cherry tomatoes, cut into pieces
• ¼ spanish onion, sliced
• ¼ lime juice
• ½ tbsp olive oil
Method:
1. Make the salsa first by mixing all ingredients together before lightly seasoning. Put in bowl and set aside.
2. Heat olive oil in frypan, add shallots, then place salmon fillets into frypan. Cook for several minutes on medium heat before turning.
3. While the salmon is still sizzling, add in prepared salsa, before turning heat to low.
4. When salmon is cooked, add butter to pan and swirl before removing from heat.
To serve
Serve salmon with warm salsa on top with cooked potatoes and green vegetable or fresh garden salad and lime wedges.
