Leading retirement provider Aveo Group has announced the appointment of Gillian Hirst as the Executive Chef of Brisbane’s landmark community Aveo Newstead.
An award winning chef with over 30 years’ experience in the culinary field and former executive chef at Riverside’s Il Centro, Hirst will bring a dynamic dining experience to residents within the Aveo Newstead community, leading the group’s Select Dining by Aveo initiative.
With a celebrated reputation across Australia, Hirst brings with her an extensive knowledge of the food industry and world-class premium dining.
Hirst’s appointment is the next step in Aveo Group’s plan to address the need for nutritional standards for seniors, with Aveo Newstead set to revolutionise retirement food services in Australia.
Executive Chef Gillian Hirst said she hopes to elevate the dining experience within the Newstead community, transforming attitudes towards food by ensuring residents enjoy nutritionally balanced meals and inventive cooking class experiences.
“Our focus is to implement a hospitality approach to cooking, developing sophisticated menus that offer residents delicious and nourishing meals,” Ms Hirst said.
Aveo Group CEO Geoff Grady said the appointment sets the bar high for retirement providers, putting the nutritional needs of residents first, but without compromising on taste or choice.

Gillian Hirst has been awarded the American Express Gold Plate Award on seven occasions, as well as the Gourmet Traveller Best Restaurant in Queensland three times.
