Meet the foodies at Aveo – Gillian Hirst

As an award-winning and celebrated chef with over 30 years’ experience in the culinary field, Gillian Hirst brings a dynamic dining experience to Aveo Newstead. Gillian has been awarded the American Express Gold Plate Award on seven occasions, as well as the Gourmet Traveller Best Restaurant in Queensland three times.

As a former executive chef at Riverside’s Il Centro, Gillian brings extensive knowledge of the food industry and world-class premium dining. Gillian is passionate about serving clean, simple and nutritious meals to Aveo Newstead residents. Gillian is also available to provide guidance to residents by designing custom menus for bookings in the private dining room.
